Build my own CFW - What can I change on the menu?

I have an old dingoo a320 that hasn't seen a lot of action in the past few years.  I want to strip down the firmware and give it to a child.  Is it possible with the editor to remove menu entries?  I want to get rid of things the child won't use, such as browser (don't want to accidentally delete games), Native games (have shortcut go directly to emulators), etc.  I don't care about actually removing the APPS, just the menu entry.  I don't mind getting my hands dirty, but I would like to know if it's possible before I go installing old drivers/etc on my pc.
